From Normandie and originally closer to cider region, Jonathan did a Phd in Chemistry and worked 10 years inside the lab. A life changing choice with a motivation of learning more and on the best way putted Jonathan back at school in Beaune and worked in Biodynamic wineries in Champagne, Burgundy and Rhône.\u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eThe vines he owns have been farmed organically for 20 years. Everything is harvested by hand and fermented with native yeast.
