Pet Nat / Methode Ancestrale
At Vintro we are very fond of Pet Nat, an old and natural way of making bubbles. This style can also be referred to as methode ancestrale, especially outside France since Pet Nat is the french abbreviation for petillant naturel, meaning natural bubbles.
It is an old method of sparkling wines, with only one fermentation. As in comparison to the classical methode, with two fermentations, we know from Champagne, Cremant and Cava.
The Pet Nat's are bottle before the end of the fermentation, where there is still some residual sugar left, often between 10-20 grams. The winemakers then makes sure that the already active yeast goes into the bottles in order to finish the fermentation and create the nice bubbles.
